Red Curry with Vegetables

Ingredients
- 2 tbsp Olive oil or coconut oil, or avocado oil
- 3 tbsp Butter
- 1 bag String Beans, trimmed
- 1 whole Red Pepper, sliced
- 1 large Eggplant, cubed
- 1 large Carrot, sliced
- 4 oz Red Curry Paste
- 1 can Coconut Milk
- 1 tbsp Honey (Optional)
- 1 cup Vegetable or Chicken Stock
- 2 tbsp Basil
- 4 cups Cooked rice, for serving
Instructions
- Heat the oil and butter:In a large pan or wok, heat the oil and butter over medium heat until the butter melts and the oil is hot.
- Sauté the red curry paste:Add the red curry paste to the pan and cook for about 1-2 minutes, stirring constantly until fragrant. This helps release the flavors.
- Add vegetables:Add the sliced carrots, cubed eggplant, string beans, and red bell pepper to the pan. Stir well to coat them in the curry paste. Cook for about 3-5 minutes, allowing the vegetables to soften slightly.
- Add coconut milk and vegetable stock:Pour in the coconut milk, vegetable stock and honey (optional), stirring to combine. Bring the mixture to a gentle simmer.
- Cook the curry:Let the curry simmer for about 10-12 minutes, or until the vegetables are cooked through but still retain some crunch. Stir occasionally to prevent sticking.
- Season and adjust:Taste the curry and add salt and pepper as needed. If you want it spicier, you can add more curry paste at this stage.
- Serve:Serve the curry hot over cooked rice, and garnish with fresh herbs like cilantro or Thai basil, if desired.
